Here's the relevant biblical passages from the Old Testament.
Genesis 9:25: And he said, Cursed be Canaan; a servant of servants shall he be unto his brethren,
Genesis 9:26: And he said, Blessed be the LORD God of Shem; and Canaan shall be his servant;
Genesis 9:27: God shall enlarge Japheth, and he shall dwell in the tents of Shem; and Canaan shall be his servant.

Why did God make humans in different colours? (He must have known the blacks would get picked on)
If there were only eight people on the Ark does that mean they were of differing ethnicities?
If not how did we arrive at so many differing ethnicities a mere 4,000 years after the world's population was wiped by god in a flood?

Because the Old Testament is probably just as mythical as the Book of Mormon and PoGP, with a little bit of historical truth sprinkled in for good measure.
All of them are the works of men with perhaps a little bit of the divine (if you believe in a Divinity).
The ancients used story and myth to explain things they didn't understand, like Rainbows, devastating floods, the origin of Mankind etc, etc. We now have a scientific explanation for those things. We know the scientific origin of skin colour and it ain't nuttin' to do with God's curses. Black skin is not a curse but a blessing for those who live in hot climates, and we all originate from a small band of Africans who were adventurous enough to migrate out of Africa at some point.

I also said that the nephites did not have white skin since they came from the middle east. I saw no proof that the church believed the lamanites or the nephites believed that their skin was either color: black or white based on the art.

Were the lamanites from sub sahara africa?

The curse of Ham (through Canaan) had nothing to do with a black skin in my opinion.

The clue was in the question, but you knew that.
You are deliberately avoiding the canon because you know how that's going to end up for you...
