It appears that "sealings" and polygamy are related. It's possible that Joseph Smith created Eve's situation in the endowment ceremony based on Emma's stubbornness in accepting polygamy. Eve is congratulated for taking the first step in eating the fruit and at the same time condemned by being made invisible and unimportant unless she has Adam. in my opinion, the only one who gives Eve the time of day in the "endowment ceremony" is Lucifer.

Your MTC leader's attitude toward Eve is interesting. The thought that God had sex with Mary is a 19th century Mormon belief which obviously didn't last. Maybe his idea about Eve in also a 19th century Mormon belief.

I'd rather be a could-be if I cannot be an are; because a could-be is a maybe who - is reaching for a star. I'd rather be a has-been than a might-have-been, by far; for a might have-been has never been, but a has was once an are. - Milton Berle

And what doctrinal basis is there for our modern endowment ceremony? Do we have any records for the original ceremony as created by Joseph, any commentary on what it means, etc.?

Covenant making perhaps? That's what the endowment is all about.

In reference to your second question I'd recommend this book:
