Chicken Caeser Salad!

(Ii'm fairly confident that this thread won't turn political but I guess we will soon see) :smile:

Any fans?

Made this again yesterday - It was beyond simply delicious - It was spectacular. It's also one of my family's favorites

Chicken breast (I used about 3 pounds because.......leftovers): Clean and cut skinless boneless chicken breast into chicken finger sized pieces.

Create dipping station: Flour to egg wash to Crushed buttery crackers (I used Club original crackers this time but I have used Ritz crackers before)
Place these babies on an elevated baking rack (so the bottom cooks too) and bake ate 375 for about 40 minutes. When done, these babies ought to be browned with a crunchy crust.

Break up the cooked chicken into bite sized pieces and toss them over your bed of lettuce. Then sprinkle on your cheese (my preference is Kraft's shredded Parmesan, Romano and Asiago). Then add your Caesar croutons and dressing (I use Ken's Creamy Caesar)

Trust me on this one - It's freaking awesome!

Let me guess, you prefer the "white meat"...and Caesar is the innuendo for your political philosophy. Funny how the lettuce is harvested by migrant workers who have no seat, let alone a voice, at your table of salad privilege. And don't even start with the anchovies!

I certainly enjoy chicken Caesar salad. I often choose that over a hamburger and fries. I'm happy that most fast food restaurants have added that and similar items to their menu. What I enjoy even more is seafood salads with salmon, shrimp and/or calamari, and sometimes even a just plain garden salad. I still order hamburgers once in a while, though, and there are some outstanding hamburger joints in my town. I probably still eat more hamburgers than is healthy for me. :wink: Some garden burgers I have tried are quite good, though, but I can't honestly say I like them quite as well as the best, regular hamburgers I have tried, and the really good garden burgers are as expensive or more expensive than many average, run of the mill hamburgers.
