I love cats. I've discovered I am not a dog person, it took 3 dogs to convince me, but I love cats. Unfortunately there will be no cats in our house. A couple of years ago my family vacationed at a friends house, she had a cat and after 3 days my youngest wound up at the hospital at 1am. Two nebulizer treatments later(and vomiting from oral meds, when the doctor asked can she take a pill I though he meant a "chewable") we finally got to leave. My daughter and I slept in the car that night and the next day we bought a tent and camped in the yard for the remainder of our vacation. I am sad there will be no kittys at our house but it is far better than the alternative. Kittens and cats are AWESOME and a perfect addition to almost any household, sadly not mine.
Ingredients: •1 cup quinoa, uncooked •2 cups vegetable broth or water •1 mango diced •1 red bell pepper, diced •1 green bell pepper, diced •2 tbsp olive oil •1/4 tsp cayenne pepper •2 tbsp lemon juice •salt and pepper to taste
Preparation: Simmer the quinoa in the vegetable broth about 10 to 15 minutes, or until water is gone and quinoa is light and fluffy when stirred. Remove from heat and allow to cool. Toss together the quinoa, mango and bell peppers in a large bowl.
In a separate small bowl, whisk together the lemon juice, olive oil and cayenne pepper. Gently toss this dressing with the quinoa. Season with a generous amount of salt and pepper
