I feel your pain, KA! My husband did all of the food for my daughter's wedding. He made amazing fresh salsa. We gave a ton of it away, and ate the rest!

I'm jealous of your guacamole stash. That's my favorite! I have never had a lot of luck with freezing it, unfortunately, and I'm not much of a canner, so don't have a lot of suggestions here.

If you have a pressure canner, go ahead and do the salsa as is, and the pico de gallo. Without a pressure canner, vinegar will make it safe.

I would try freezing (without air) the guacamole if I had the space. What does it matter if you toss it now or later? It might be a good addition to a salad dressing if the texture thawed is not satisfactoryl

One thing you might try with the quacamole is to thin it out with a bunch of pureed tomatillos and lime juice. In a lot of Mexican restaurants you see this really thin, avocado-based salsa that they call "aguacate." I bet that would freeze a lot better than the guacamole on its own.

"Salsa" simply means "sauce." Pico de gallo is just one type of salsa--usually with the components cut into small pieces. Some people call it "Salsa Mexicana," because of the colors.
