Would I be wrong if I made a thread just for smoking/grilling meats? It's something I'm kinda passionate about, and y'all seem interested in. Yeah or no?
I would love to see that thread - In addition to a few YouTubers I watch (A couple of dudes from the south that show you how to make fabulous low and slow smoked brisket - with a wonderful bark by wrapping the meat in butcher paper - as well as homemade BBQ sauces) I would love to read the war stories from folks here about smoking/grilling meat
Started off this am with a 5lbs chuck roast. Been slow cooking it in a tomato, onion, garlic, an anjo/jelepeno slurry(put a half tablespoon of cocoa powder in along with about four limes). Stuff is melting apart, so it's off to rest while the tortillas warm up. Some fresh pico and cilantro and I've the most baller tacos ever.

Those Birria pot roasts make excellent tacos.
Moksha Recipe Idea: Put some birria on pita bread, top it with mango chutney and romaine lettuce. Fold and eat. I've never tried this, but it sounds good. This could be done on a smaller scale with little tortillas or even wonton wrappers.
