I am wondering if anyone knows any recent statements issued by Church leaders in regards to government power or war. The Church during the era of David O. McKay came out against the draft and they questioned the wisdom of having a large standing army. Spencer W. Kimball said training a man to kill is a counterfeit form of patriotism and is not in line with the scriptures and he also told the US government where they could put their MX Missile system. Ezra Taft Benson is well known for encouraging people to distrust government as it is filled with corrupt, conspiring individuals who care nothing for the US Constitution.

I remember "War and Peace" well as it was instrumental in shaking me out of my TBMness. It has a very different message than the others you cited. It spends a lot of space espousing the virtues of peace, but the message is that when push comes to shove we need to just trust our government in such cases.

Still Utah has one of the lowest enlistment rates in the US for military service.

Affluence (or lack thereof) is a bigger indicator of how likely a person is to serve than any kind of belief, whether that be political or religious in my opinion.
I served with plenty of Mormons who also served missions, Joseph. I work with a hell of a lot of non-Mormons who not only didn't serve, but even look at it as wrong or nothing more than a path someone used to pay for college. Very, very few people, in my experience, see military service as truly value-driven any more.

that the reason many conservative Utah Mormons don't join the armed forces is that they have objections to US foreign policy. I have met more than a few who despise what they call the "New World Order" and would see serving in the military as supporting it.
