Refried beans, when properly made (I.e., with lard), are absolutely delicious: creamy, not heavy, and tinged with a slightly bacony, porky flavor. All too often, the brown sludge plopped onto plates at Americanized Mexican restaurants is overly starchy junk, which probably explains why these restauranteurs feel the need to cover the beans with boatloads of sour cream and cheese. Real refried beans need no adornments whatsoever, save perhaps a squeeze of lime juice.

Thanks, Scratch!

I was going to mention that if refried beans are made with lard, they're fantastic! I love refried beans made correctly. There's a restaurant nearby that makes them perfectly and they do have a hint of smoky, bacony flavor. Yummy! They also deliver freshly made flour tortillas to the table.

I'm getting hungry!

I like good refried beans (ever have the black Guatemalan kind?). I agree that it's all in the making of them. The canned stuff is uniformly bad, particularly the fat-free (shudder) kind.

I'd go so far as to say that refried beans, made properly with lard, are one of the glories of god...

It beats the propaganda he's been spewing about it being intelligence.

Eat, drink, and be merry, for tomorrow we die.

Or... a little lard never hurt anyone! It's lard every day that accounts for the derogatory nickname.

Sammael says hi back and was wondering if you'd be up for a possession this week.
