Does anyone else think of the immortal Chris Farley's Matt Foley character line "In a van down by the river!" from SNL when they read the thread topic?

I'll expect just that, GoodK. And you should expect to be challenged if you fish for evidence of lavish living by the LDS authorities, but not for evidence of the opposite as well. ;)
by the way, it wouldn't be hard to check Salt Lake County property records, etc. to determine the number and value of homes owned by the General Authorities, if one were that interested. I'm not. But perhaps you would be.

Property records aren't all that difficult to research. With respect to Gordon B. Hinckley specifically, the real estate he owns elsewhere in the United States is a matter of public record, and as Don indicated, that same search process can give information on any property holder, including LDS General Authorities.

And I'm pretty certain the property would be under some other name, perhaps The Church Of Jesus Christ of Latter Day Saints.

With a little research, you can figure this out yourself.
I worked for sometime as a title searcher--i.e., with property records; and they aren't the least bit difficult to search. Property transactions, to be legally binding, must be recorded at a county office and available for public inspection. They are indexed for easy searching (by the names of the persons involved, as well as, in some states, by the property location). And many counties offer at least partial access to such records online. Many more offer online access to the county assessor's records, which allow you to identify who owns what, what the property is appraised at, and what the annual property tax assessment is.
I used these types of records, and many others (divorces and other civil cases, federal tax liens, even criminal cases) all the time as a title searcher.
I think you'd be hard pressed to argue that the homes, condos, etc. owned by LDS Authorities would actually be in the church's name. I'm certain the president's apartment is owned by the presidency corporation, but can't imagine why the rest would be.
by the way, having just taken 60 seconds to check the Salt Lake assessor's office, it looks like they offer searches by location online for everyone, but offer individual-name searches online only through a subscription service. You can probably do name searches yourself at the county recorder's office (we could in the county where I did title searching), and you could certainly locate the properties GAs own, and then use the property location to check the assessment information.

I checked, and it's possible to obtain addresses for GAs (e.g., Monson) via a "people search" site. The catch is that it would cost (slightly). You could likely find addresses for a number of them relatively cheaply if you subscribed to one of these people search services for a minimal period, and then searched the names that interest you. You could then look up the addresses via the online Salt Lake assessor's database, which you can find just by Googling "salt lake" and "assessor." It will be the first result that pops up.
If the GAs lived in lavish homes, I imagine someone would have discovered this by now, and posted on it endlessly at RfM. (Don't you think?) But if not, perhaps you can be the one to break the story!
