Interesting find...
I went to the LDS.org hymn site and did a search on all hymns with the term "I know". 130 results.
I then searched on "I believe". 24 results. 12 of which are the "Article of faith" primary songs.
This appears to be yet another subtle brainwashing technique used to get members to think they know what they can't possibly know.
Music is a very powerful re-enforcer.

It could also be that know is easier to work into lyrics then believe.

I quite agree that “music” is a powerful force (enforcer) in religion. Bach and Handel were well paid for their musical compositions which played and still play a major role in religion.
The music alone is spectacular absent any religious appliqué.
As organist at several churches, I often received compliments for the music.
With a new Casavant Organ, Saint Paul’s features John Scott Jan. 18 in a spectacular organ concert. (Most thought the previous organ was one of the finest in Indianapolis.)
Location for Saint Paul’s is in Indianapolis where music is a major part of the church experience.
As an Episcopal church, receptions also feature wine and cheese along with other goodies. Eli Lilly (the pharmaceutical company) is a major source of wealth for Saint Paul’s and virtually all concerts are FREE to those who wish to attend.

The oddest thing about Testimony meetings is when a nine year old kid gets up there and says "I know the church is true... I know Joseph Smith was a true prophet..."
And parents sit there proud and smile (or sometimes they go up there and whisper in their ears feeding them the lines... anyone ever see that?) all the while thinking it is cute to mentally abuse their children...

Earlier than what, three years old? That's not early enough for you?
Mormonism ceased being a compelling topic for me when I finally came to terms with its transformation from a personality cult into a combination of a real estate company, a SuperPac, and Westboro Baptist Church. - Kishkumen

I imagine there may be a bit of shock value and propaganda mileage derived by some people when using sensationalistic words like "abuse" in relation to even perfectly innocent and even edifying cases like children's testimonies. But, I personally have thought it prudent to restrict usage of such words to clearly severe and negative cases, so as not to trivialize the term or the severe and negative cases. But, that may just be because I don't wish to come across to reasonably minded people as shrill and incredulous.

I was started much younger. A few of my lullabies were hymns and my earliest memory is either a lesson in Nursery or my Q-Bert coloring book or when I almost drowned. Not sure of the order.
