The multiple spouses is an extension of the family unit. Its that righteous family name, as in the Father who has properly upheld his covenants with God and is standing in order before God, sealing his name upon his wife/ wives and bearing children with that name sealed upon them. He has claim on them in the world to come, as they bear his name and they are his.
The same as Christ lays claim all all those who took upon themselves his name and bore it with honor. Its the same thing.
We can easily forgive a child who is afraid of the dark; the real tragedy of life is when men are afraid of the light. - Plato

Why can't they do that with only one wife?

Many do. They live out this life in perfect faithfulness to their spouse and honor their covenants and will receive their exaltation. I woudl venture to guess though that in the eternities the righteous women outnumber the men though.

But polygamy is of God when it is commanded by God. That is without question.

Yes.
How is that achieved?
Through various means we are able to become the sort of beings God would have us be. We have many ordinances to help us, prayer, righteous living, repentance, and most significantly the atonement.
Polygamy strikes me as somewhat odd in the eternal scheme of things. I mean, we are all brothers and sisters in the first place. I don't really see any advantage to polygamy when that and the afterlife are taken into account.
Anyhow, I was just musing on the strangeness of the term. It's like being amused at the inherent contradiction of terms like Jumbo shrimp, military intelligence, plastic grapes, or the liar song:
"One fine day in the middle of the night, two dead boys got up to fight, back to back they faced each other, drew their swords and shot each other . . . "
