Are the Scriptures "sustained" as Cannon in General Conference?

It has happened I believe.

Fair article on the 1835 edition of the Doctrine and Covenants

Cowdery also wrote a statement of belief on government that has been retained in our current edition of the D&C as section 134. Both were sustained at the conference and included in the 1835 D&C, which was already at the press and ready to be published.

I don't think they could be unless it could be ascertained that all members had the latest version. Otherwise members would e sustaining differing texts...

the D&C and the PofG have been sustain a couple of times.

hmmm....i will try to be more clear.

During the "business" part (numbers, Sustaining of Officers etc) of GC is it brought up that the LDS accept the scriptures or something like that?

They would need to be specific about which edition they were wishing for people to sustain because, as we know, there have been significant material revisions and alterations with each subsequent re publication.
This would have the added benefit of forcing members to keep up to date by buying the 'sustained' version of scriptures - a bit like buying your teams latest kit.
