Davis said that the wheat we eat these days isn't the wheat your grandma had: "It's an 18-inch tall plant created by genetic research in the '60s and '70s," he said on "CBS This Morning." "This thing has many new features nobody told you about, such as there's a new protein in this thing called gliadin. It's not gluten. I'm not addressing people with gluten sensitivities and celiac disease. I'm talking about everybody else because everybody else is susceptible to the gliadin protein that is an opiate. This thing binds into the opiate receptors in your brain and in most people stimulates appetite, such that we consume 440 more calories per day, 365 days per year."

...Davis said a movement has begun with people turning away from wheat - and dropping substantial weight.

"If three people lost eight pounds, big deal," he said. "But we're seeing hundreds of thousands of people losing 30, 80, 150 pounds. Diabetics become no longer diabetic; people with arthritis having dramatic relief. People losing leg swelling, acid reflux, irritable bowel syndrome, depression, and on and on every day."

The big idea is knowing when a prophet is thinking like a man when he is telling someone he's speaking for god.

I read about halfway through that guy's book ("Wheat Belly"). It's pretty interesting stuff. He does seem very passionate about it, but as I recall he talks mostly of case studies (anecdotes).

I got maybe 15 pages into the book before I got bored with it, so I can't speak to the arguments he makes therein or the evidence he uses to bolster them. I have, though, been acquainting myself with the whole "Paleo/Primal" movement, so I think I can probably imagine the direction in which the book goes. And I have to say, if grains do contribute harmfully to obesity, high blood sugar, increased small LDL, inflammation, IBS, etc, and if the removal of grains results in healthful improvements in these and other areas (and I am increasingly becoming convinced that this is the case), then the Lord's endorsement of grains/wheat in the Word of Widsom is... interesting.

Here's a clue. Whenever the prophet tells you he's speaking for god, that's when he is thinking like a man--and you better grab and hold your wallet very tightly with both hands.

From your quote, the biggest issue is "genetically modified" wheat, not all wheat, certainly not all grain.

I'd be skeptical of sweeping claims from diabetes to IBS. What no cure for dandruff or ingrown toe nails, as my grandfather used to say. Diet has become the new patent elixer. Which is not to say that one should eat poorly. Moderation in all things, including, moderation.

Having done seasons and seasons of extremely arduous labour jobs in fields and forests, and being prone to long distance hikes and runs, I understand why grains are the staff of life.

Having sat through years of lectures and study at university, lacking time for much physical exertion, I understand why grains can be a curse.
