But, yeah. We moved to Brazil for a new challenge. I wanted to learn Portuguese and my wife wanted to get to know her Brazilian side. So, here’s to new adventures! Saúde!
Wow, man, that's so freaking great! I very happy for you (and honestly a little jealous, but that's minor compared to just being thrilled you took the plunge).
I guess this jazzes me up so much because my wife and I are thinking of doing the same thing, and Portugal was our initial choice. Lately I've been thinking Albania, but the idea's the same. It's time to get the “F” out of dodge.
We'd have left already but we have my wife's parents to consider. They're the only thing holding us back at this point.

For sure, it’s a decision not to be considered lightly. I do think it’s worth that consideration, though. And if that takes you to the point of approaching the parents about it, who knows? Maybe they’d be excited for you? You know your situation best, Coimbra is lovely, by the way
Speaking of which we’re headed back in September to finish our “peregrino” no caminho Português. It’s kind of awesome how far we’ve come with the language in this one year. Last June we could hardly string a few words together and forget about understanding anything. It was a huge leap to go there for a hike. It was so hard, ha. Now? I understand almost everything and can speak well enough to get by. It feels good, man.
Also, Albania looks beautiful. It’s in a great location. You could do worse!

Yes, we've brought it up already with her parents (wanting them to come with us). Her mom is all about it but dad doesn't seem as keen.

This is definitely one of the draws: learning a new language and being immersed in the culture. I bet making that progress does feel good.

Like Portugal, I'm attracted to the long coastline and gorgeous beaches.
I was thinking we may have hijacked the thread, but it occurs to me these plans start with a small seed and grow into something huge. Lots of planning and logistics (water and soil).

Just a side note since I did not know this. I actually sprouted popcorn the other day. It was extremely difficult to do. I put the kernels on a moist paper towel, folded them into it and put it into a plastic baggie. I waited 4 days and wala! Popcorn gots tails! (roots) So, I then replanted them outside in a bucket. I don't see greens yet, but it takes a few days. I hear the greens are delicious and most folks just eat the cobs when they mature. But the microgreens taste like delicious sweet corn, so, since I have no room for actual corn, I am using it for the microgreens. FUN!

Yeah you totally can sprout popcorn. I did plenty of rooting experiments in the classroom. Investigate how to use the seeds from tomatoes and strawberries. Some seeds we try to sprout are actually sterile (I forget why) and won't bear fruit. I've got pumpkin seeds growing in front that are likely sterile. I "decorate" in front with real pumpkins and for the deer. They grab those things by the stems and toss them all over the place to break them open and leave the seeds behind. When they're done I get the stems!

I just roasted some pumpkin seeds tonight. In the mornings I grind Flax seeds, pumpkin seeds and will combine them with sprouted Mung Beans and an egg for breakfast. We are talkin’ super dense nutritional dynamite baby!!!

Apparently, so are the Kushners. Did you see that?

That works!

I have sprouted clover. My first time. This stuff is quite good tasting actually. I eat sprouted garbonzo beans daily, a handful in the am and one in the pm and it's a great way to jab a little more goodies into me. My popcorn I transplanted is now over 4 inches tall! It is jumping to the sky. I also transplanted some mung beans and they are going blitzoid too! I can now eat my lettuce and spinach everyday, along with the chard, and on ham sandwiches, it is so dang delicious my mouth is watering typing about it. ESPECIALLY on toasted sour dough bread. I also made a loaf of bread from the garbonzo beans and flax seeds! Sorta weird, it came out more like a muffin actually, but the pumpkin seeds on top was an added flavor that worked good. It sort of sliced, so I tried it with butter and some honey. Actually very tasty. I'm gonna try the recipe that uses eggs next. I think I'll go with garbonzos and oats however. Somehow, weirdly enough, that really sounds good to me. I know, I'm weird. Oh, And I've lost 5 pounds, and I ain't even trying to. I gotta confess, I miss my pizza though......
If it’s not too much of a bother, can you snap some photos? Perhaps pairing visuals with your updates will help us feel closer to the joy you’re feeling.
