Agreed. I'm not a huge fan of wine (I like hoppy or hazy IPAs and Glenlivet scotch - 18 year old single malt is to die for), but man, a sip of red wine after tasting a sharper cheese is among the greatest oral experiences one can have. It's almost like the cheese dilates your taste buds to accept everything the wine has to offer. Soooo good.
