Not every statement made by a Church leader, past or present, necessarily constitutes doctrine.

The key is indeed understanding what astray really means. But into error is just one definition. When I look up astray in "www.dictionary.com" the first definition I get is "out of the right way; off the correct or known road, path, or route." When I hear the LDS leadership say God will not let them lead the members astray, I believe it means God knew ahead of time the likeliness that they would lead the members in the way that God wanted them to go, and chose them accordingly, confident that they will get God's message very close, and ready to stop those LDS leaders by any means available if they got too far off message.
Will there be some errors in some of the things the leaders teach? I think it's inevitable that there will be some such errors. But God has picked and chosen the LDS leaders to speak for Him because He knows that they are going to do a better job of leading us to eventually understanding God than anybody else in the world is going to do.
