Any truly intelligent person will find the first statement quoted above “absurd.” Why? Because it is a mere assertion that the writer cannot prove. The writer cannot have surveyed “most educated people.” The writer ignores the vast number of educated people in the LDS Church.

1) Ahahaha.
2) It does not follow from the existence of a large group of LDS being well educated, that a large body of well educated would be LDS. That's affirming the consequent. So it does not matter one wit to a person arguing that most educated people would reject Mormonism that Mormonism obviously contains people who are intelligent, have advanced degrees, etc.
