I think in order to answer that question reasonably, we need to know where you think an individual’s rights end with regard to to other individuals. We also need to know if you believe a government should be given the power to protect its citizens at the expense of individual libertarian rights.

I don’t think they have, Shades. Constitutional rights are not absolute, and are subject to reasonable restrictions on time, place and manner. In an emergency, what is reasonable changes, depending on the circumstances. The Constitution is not intended to protect groups that threaten the life and health of others. The alternatives — forced isolation and quarantine — have been found Constitutional. I think governors are attempting to protect the life and health of their citizens through less invasive means.

Only if you put the unwilling at risk. If everyone in proposed peaceful assembly X knows the risks and choose to participate anyway, I don't think any local government has the power to overturn a constitutional right--especially since the Constitution is the supreme law of the land (i.e., taking precedence over any state government).
The problem is that you can't get consent from everyone the peaceful assemblers have contact with outside that room. And your consent also doesn't include the healthcare workers who will need to take on additional load because you needed your reckless freedom. Your death pact also doesn't include all those who will die because the hospitals are overloaded after you all decided to bask in the glow of American Freedom.
Some things require an adequate government response. The constitution is not dogma.
Religion is for people whose existential fear is greater than their common sense.

That probably ought to be determined on a case-by-case basis, but I think the principle of informed consent takes precedence.

The religious groups did NOT lose their right to peaceable assembly. They retained that right so long as they assembled in groups of 10 or less.

Your right to assemble is void if it puts others in danger.
Unless of course it's a mostly peaceful BLM protest. Then the rights of healthcare workers, property owners, risk of COVID spread or even just the right to walk down the street without being mugged and assaulted all become irrelevant once the race card is played.
